I don’t know if there’s a market for it but an Irish restaurant would be in order I think. We don’t have such a thing in the U.S.— not very much— and it’s a type of cuisine that’s much more varied than you think. It’s not just cabbage and boiled potatoes. The problem is we’d need to generate an enthusiasm to keep that in business.

I would be really excited for there to be a place with more vegetarian options. I love me a good veggie burger from The Bear, and I love The Bear…but I don’t always want to go in, it’s a whole vibe. If anyone wants to pick this up, we need more cheap veggie burgers!

I just came back from France and we don’t have anything in Chico that compares to that experience there. I don’t know if there’s a possibility of that happening…we don’t dress nicely enough or take a long enough lunch. Culturally, we’d have a difficult time getting that into our experience but that’s the thing that comes to the top of my head.

The kind of cuisine that’s missing in Chico is what used to be available at the Jesus Center. Meals for breakfast, lunch and dinner for all who want to come in. It would be great if we could have that again.

I would say Mexican food. [What’s here now] is not the best quality, it doesn’t taste as homemade as it should.
